          <dc:description>&lt;p dir="ltr"&gt;New Zealand is famous for Mānuka honey, yet many local non‑Mānuka honeys also possess distinctive chemical traits and functional potential shaped by unique geography and floral nectar sources. Compared with Mānuka honey, these non‑Mānuka varieties remain severely under‑researched, despite evidence of their characteristic chemical and bioactive profiles. This study aims to comprehensively characterise New Zealand native non‑Mānuka honeys to fill these research gaps. Physicochemical attributes will be measured using standard methods: potentiometric titration (pH, free acidity), refractometry (moisture), and the Pfund scale (colour). HPLC will quantify sugars, phenolics, vitamins, 5‑hydroxymethylfurfural, organic acids and amino acids, while GC‑MS will analyse volatile constituents such as terpenoids, aldehydes, alcohols and esters. By integrating these multi‑dimensional datasets, this work seeks to establish compositional knowledge and chemical fingerprints for native non‑Mānuka honeys.&lt;/p&gt;</dc:description>
