<dc:description>
The micromorphology characteristics of melanoidin was observed by field emission scanning electron microscope. The Fourier transform infrared spectroscopy and ultraviolet spectroscopy were employed to analyze chemical construction and compositions of melanoidin. The ABTS and DPPH method were used to determine the in vitro antioxidant activity of melanoidins. 16S rRNA gene sequencing technology was employed to investigate the diversity of microorganisms in the feces. We employed gas chromatography-mass spectrometry (GC-MS) targeted metabolomics to detect short-chain fatty acids (SCFAs) in the feces. The in vitro fermentation method was used to investigate the transformation of feces on flavonoid components. The animal experiment was approved by the Experimental Animal Ethics Committee of Guangdong Pharmaceutical University (No.gdpulac2025245).
</dc:description>
